Sunflower Appetizer/Salad

Here is an alternative to traditional chips and salsa.

Ingredients:
  • 1 can whole kernel corn, drained (fresh corn tastes better, of course)
  • 1 cucumber, diced
  • 1/2 small onion, diced
  • 2 large vine-ripe tomatoes, diced
  • 1 can chopped black olives
  • salad dressing to taste (my usual choice is salt/pepper and olive oil)
  • parsley and potato chips for decoration
Directions:
  • Mix all ingredients except 1/2 can of corn, parsley, and chips.
  • Arrange on a platter.
  • Decorate with remaining corn, parsley, and potato chips.  You can also make a lady bug from a small tomato and black olive.
  • Warning:  Potato chips won't last long so add at the last minute!

If you use olive oil for dressing and light potato chips, it's 175 per serving, 4 servings in this recipe.
