- Chop mushrooms and cook on high heat until slightly crispy.
- Chop roasted chicken and add to the mushrooms.
- Add a little bit of mayo, to hold mushrooms and chicken together.
- Spoon chicken-mushroom mixture onto sliced tomatoes.
- Sprinkle with non-fat cheese.
- Broil for a few minutes until cheese is melted.
- Arrange on lettuce leaves.
- Sprinkle with finely chopped parsley.
